Step 1: Prepare the Oreo Crust- Preheat the Oven: Preheat your oven to 325°F (165°C).
- Make the Crust: In a food processor, pulse the Oreo cookies until fine crumbs form. Pour in the melted butter and mix until the crumbs are evenly coated.
- Press into the Pan: Press the Oreo mixture firmly into the bottom of a 9-inch springform pan, creating an even layer.
- Bake: Bake the crust for 8 minutes to help it set, then let it cool while you prepare the filling.
- Cream the Cheese and Sugar: In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy, about 2-3 minutes.
- Add Cocoa and Melted Chocolate: Mix in the cocoa powder, melted chocolate, and vanilla extract until well combined.
- Incorporate Eggs and Cream: Add the eggs one at a time, beating on low speed after each addition. Be careful not to overmix. Finally, add the heavy cream and mix until just combined.
- Pour the Filling: Pour the chocolate cheesecake batter over the Oreo crust, spreading it into an even layer.
- Bake: Place the cheesecake in the oven and bake for 60-70 minutes, or until the center is set but still slightly jiggly.
- Cool and Chill: Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight for the best texture.
Optional Ganache Topping
For an extra layer of indulgence, top the cheesecake with a simple chocolate ganache:- 1/2 cup heavy cream
- 1/2 cup semi-sweet chocolate chips
- Make the Ganache: Heat the heavy cream until just simmering, then pour it over the chocolate chips. Let it sit for a minute, then stir until smooth.
- Pour Over Cheesecake: Pour the ganache over the chilled cheesecake, spreading it evenly. Allow it to set before serving.
